Hay, hay, hay!

I just wanted to share this delicious cookie recipe that I made for my hubby on Valentine’s day this year! We absolutely loved these and hope that you will as well! You can substitute any holiday’s themed m&ms!

Valentine’s Day M&M Cookies

Adapted from the averiecooks.com recipe.

Prep Time: 15-20 min

Cook Time: 11-16 min

Servings: 15 large cookies or one pazookie (aka skillet cookie)

  • 3/4 cup unsalted butter, softened (1 1/2 sticks)
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup instant vanilla pudding mix (not sugar-free and not 'cook & serve'), OR use 2 teaspoons cornstarch in place of pudding mix
  • 1 teaspoon baking soda
  • pinch salt, optional and to taste
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup milk chocolate M&M's mixed into the dough + about 1/2 cup for placing on top of dough mounds

1.       Preheat the oven to 350 degrees.

2.       Combine the butter, brown sugar, white sugar, egg, vanilla, and beat on medium-high speed in a Kitchen Aid mixer or in a bowl with an electric mixer until creamed and well combined, about 4 minutes.

5.       Using a large cookie scoop or spoon, 1/4-cup measure, or your hands, form 15 equal-sized mounds of dough, roll into balls, and flatten slightly and place on a cookie sheet that has cooking spray on it about 2 inches apart.

·                     Another option: Grease a large cast iron skillet and put all of the cookie mixture in the skillet and smooth out. Tip: Once you put the entire mixture in the skillet with a spatula, then run your fingers under water and then smooth out the cookie dough mixture. The water will help the cookie mixture from sticking to your fingers.

6.       Add M&Ms to the top of each dough mound or the top of the pazookie.

7.       Bake cookies for 11 minutes, or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center. Cookies firm up as they cool. Allow cookies to cool on baking sheet for about 10 minutes before serving. If you are making a pazookie in the cast iron skillet – you will probably have to cook it longer.  Cook until edges are brown then the cookie will continue to cook after you bring it out of the oven.

Hope you enjoy these delicious cookies - even though it isn't Valentine's day season anymore you can make these just because you love someone!
